Ingredients
1 lb boneless skinless chicken
1 breast halves
1 tsp minced garlic
1/2 cup lime juice
1 tbsp honey
1 tbsp grated gingerroot
1 tbsp grated lime rind
1 cup peeled, seeded cucumber --
1 finely diced
1 tsp minced garlic
2 tbsp minced cilantro
1/2 cup seeded tomatoes -- finely
1 diced
1 small jalapeno chile -- seeded and
1 minced
2 tbsp rice vinegar
CUCUMBER RELISH
Directions
1. Cut chicken into 1-inch pieces and place in a large, shallow pan.
In a small bowl mix together garlic, lime juice, honey, ginger, and
rind. Pour over chicken and let marinate for 30 minutes, tossing
frequently.
2. Preheat broiler or grill. Assemble chicken on short skewers. Broil
or grill until browned (5 minutes). Serve immediately with Cucumber
Relish.

marinate
15 minutes before serving.
Makes about 2 cups.

The History of Recipes
Historians have traced the existance of recipes way back into the far past, certainly as far back into history as the Egyptians, and maybe further still. Interesting though that maybe, these, ancient cookbooks were just very basic pictorial instructions for meal preparation.
Fascinatingly, the oldest recipe found, according to Professor Solomon Katz, is a series of ancient tablets in Sumerian describing the baking of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made anyone who drank it feel exhilarated and blissful. During the time of the Romans a roman called Apicius compiled a few documents showing how to cook the recipes cooked by his fellow Romans. In his works, Apicius recounts how the meals were separated into appetizers, entrees and dessert, something we still use today. Aspicius informs us how the ancient Romans made use of many spices, including some that we all recognise such as basil, fennel and asafoetida. Later on, in the 15th century, people returning from the crusades brought us a variety of foods, spices and herbs from the East, including coriander, parsley, and basil. These new spices and herbs led to a surge in recipe publications, most of which are now in private libraries. When we get to the 20th century, cookery publications are greatly in demand due to increased literacy, people having more leisure time and disposable income. The arrival of TV brings us TV chefs and the accompanying recipe books. And that brings us to the present day and the invention of the internet, permitting everyone to search through massive numbers of recipes like the ones you can find on this web site. |
