The History of Recipes
Academics have traced the existence of recipes far back into distant history, at least as far back into recorded history as pharonic Egypt, and potentially, even further back. Having said that, generally, these old records were just very simple hieroglyphic instructions for meal preparation.
Fascinatingly, the oldest recipe discovered, according to food historians is a collection of clay tablets in the Sumerian language describing the baking of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made anyone who drank it feel wonderful and blissful. Progressing into The time of the romans 25BC a roman called Apicius created some scripts describing recipes enjoyed by wealthy Romans. In his works, he tells us how the roman meals were separated into hors d`oeuvre, entrees and dessert, a very modern way of dining. He also tells us how the ancient cooks were skilled in the use of a wide range of aromatic flavors, including some familiar names like thyme, mint and asafoetida. Moving our culinary historical trip onwards, there were a couple of cookery books published in the fourteenth century : one book titled `Forme of Cury`, and another entitled `Curye on Inglish`. Surprisingly, they are not about the curry that is served today, but instead accounts of the types of food eaten by the rich people of the period. Later on, in the 15th century, people returning from the crusades brought us a variety of foods and spices from the holy land, including coriander, parsley, basil and rosemary. These new herbs and spices was responsible for an increase in manuscripts on cooking, the majority of which are kept safe in private libraries. When we get to the 20th century, cookery books are highly popular as a result of better eduction, more leisure time and having more money. The arrival of TV gave us TV cooks and the demand for the spin-off recipe books. And that pretty much brings us to the present day and the invention of computers and the internet, allowing everyone to access thousands of recipes just like those on sites such as this. |
