The History of Recipes
Transcribed cooking instructions as a concept can be observed back into antiquity, in truth as far into history as the ancient Egyptians, and possibly even further. Interesting though that maybe, in the main part, these ancient records were just very simple pictorial, hieroglyphic or cunieform instructions for food preparation.
In an interesting twist, the most ancient recipe found, according to experts in ancient history is a collection of clay tablets in ancient Sumerian which describe the preparation of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making people feel `wonderful`. Much later, in Roman times a man called Apicius compiled a collection of documents which described recipes cooked by wealthy Romans. In his publication, he tells us how the roman meals were split into hors d`oeuvre, entrees and desserts, a style of dining still practiced today. This early Roman chef tells us how the ancient chefs were skilled in the use of many herbs, including a few you will know like bay, rue and asafoetida. Later on, in the 15th century, the Crusaders brought back many new spices and herbs from the East, including spices such as coriander, parsley, and basil. The introduction of these new herbs and spices caused an outbreak in recipe books, many of which still exist in private collections. Over the succeeding few hundred years, the powerful families of Europe tried to serve up the most exotic banquets, and as a result chefs and their recipes increased in prestige. Even so, it wasn`t until the 1800s that cookery and recipe collections became really popular. Mrs Isabella Beeton in the UK, and the equally famous Fannie Merritt Farmer in the USA, devoted much of their lives to collating, verifying, and writing down recipes to allow everyone to enjoy them. When we get to the twentieth century, cooking books were starting to become popular mostly due to increased literacy, more spare time and a general increase in wealth. The TV revolution brought us celebrity TV chefs and the accompanying recipe books. Which pretty much brings us to the present day and the invention of computers and the internet, allowing everybody to access thousands of recipes such as those found on this recipe site. |
