The History of Recipes
It is quite feasible to prove the history of transcribed cooking instructions far back into the far past, at least as far back into recorded history as pharonic Egypt, and possibly even further. Having said that, in the main part, these old cookbooks were just primitive pictorial, hieroglyphic or cunieform instructions for food preparation.
In fact, the oldest recipe discovered so far, according to academics are some ancient tablets in Sumerian which recount the baking of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made those who drank it feel wonderful and blissful. Progressing into Roman times around 25BC a roman called Apicius created a few scripts describing recipes prepared by his fellow Romans. In his publication, Apicius recounts how the meals of wealthy Romans were separated into appetizers, main course and desserts, something that is very familiar to us today. Additionally, he tells us how the chefs of Roman times used many herbs, including a few that will be familiar to modern cooks for example bay, fennel and asafoetida. Later on in the 1400s, people returning from the crusades brought us many foods and spices from middle-east cuisine, including spices such as coriander, basil and rosemary. The introduction of these new foods and spices led to a torrent in recipe books, some of which are now in academic collections. For the centuries that followed, the families of Europe competed with each other to serve up the most extravagent banquests, and because of this chefs and their recipes were at a premium. Notwithstanding that, it was during the nineteenth century that cookery and recipe publications rose to prominence. Mrs Beeton in the UK, and Fannie Merritt Farmer in the US, devoted their lives to collecting, verifying, and publishing recipes common in their social group. The introduction of the TV gave us TV cookery programs and the demand for the spin-off recipe books. Which pretty much brings us up to date and the invention of computers and the internet, allowing everyone to access thousands of recipes like the ones you can find on this web site. |
