The History of Recipes
Food historians have tracked the existance of recipes way back into the far past, in truth as far into history as the early Egyptians, and possibly even further. Interesting though that is, these, old recipes were just very simple pictorial, hieroglyphic or cunieform instructions for preparing meals.
Fascinatingly, the most ancient recipe in existence, according to experts is a series of clay tablets in the Sumerian language which describe the baking of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made those who drank it feel `blissful`. As our culinary historical trip moves on a few more years we have two interesting recipe books dating from the 1300s ; a recipe book called `Forme of Cury`, and another, similary called `Curye on Inglish`. Despite their titles, these two books are unconnected to the indian curry that we all know today, but rather descriptions of the types of food on the tables of the wealthy. In the fifteenth century, knights returning from the crusades brought back many new spices and herbs from Arab cooking, including spices such as basil and coriander. The introduction of these new culinary ideas led to a torrent in books on cookery, the majority of which still exist in academic collections. Over the following few hundred years, the upper-class families of Europe tried to serve up the most exotic banquets, and as a consequence, chefs and their recipe collections were highly sought after. However, it was during the nineteenth century that cookery and cookery books really came of age. Mrs Isabella Beeton in the UK, and the equally well-known Fannie Farmer in the US, spent years to assembling, verifying, and recording recipes for their fellow cooks to enjoy. By the arrival of the 20th century, cooking books are increasing in popularity mostly due to more people being able to read, more spare time and disposable income. Like it or not, the introduction of television brings us celebrity chefs and the accompanying recipe books. Which brings us neatly up to date and the internet revolution, permitting us all to access thousands of recipes just like those on our web site. |
