The History of Recipes
We can read the history of meal recipes back into distant history, at least as far back as early Egypt, and maybe further still. Interesting though that is, generally, these old recipes were just very simple pictorial recipes for preparing meals.
In fact, the oldest recipe found, according to historians are some tablets in the Sumerian language which recount the baking of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made drinkers feel blissful. Later on, in Roman times around 25BC a Roman scholar, called Apicius, assembled some scrolls detailing recipes cooked by wealthy Romans. In his scrolls, he tells us how the meals of wealthy Romans were split into hors d`oeuvre, main meal and dessert, known in latin as `Gustatio, Primae Mensae and Secundae Mensae`. Aspicius informs us how the Roman cooks used many aromatic flavours, including a few that are still present in modern kitchens such as basil, fennel and asafoetida. For the next few years, the wealthy families of Europe competed to serve up the most extravagent meals, and as a result the best cooks and their recipe collections were greatly in demand. However, it wasn`t until the 19th century that fine cookery and cookery books became really popular. The Famous Mrs Isabella Beeton in the UK, and the equally well-known Fannie Farmer in the US, devoted their lives to collecting, trying out, and recording the recipes that were being prepared for the better households. By the advent of the twentieth century, recipe publications are in great demand, mostly as a result of increased literacy, more leisure time and having more money. The introduction of the TV brought us TV cookery programs and the demand for the accompanying recipe books. And that pretty much brings us to the present day and the invention of the internet, permitting everyone to access thousands of recipes like the ones you can find on sites such as the one you are reading now. |
