The History of Recipes
We can track the history of written recipes far back into the distant past, at least as far back as early Egypt, and potentially, even further back. Interesting though that maybe, sadly, these old cookbooks were just very basic pictorial, hieroglyphic or cunieform instructions for preparing food.
In fact, the oldest recipe discovered, according to experts is a series of ancient tablets in the Sumerian language describing the preparation of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made anyone who tried it feel blissful. Progressing into Roman times around 25BC a roman called Apicius created a few documents detailing recipes enjoyed by his fellow Romans. In his publication, Apicius recounts how the meals of wealthy Romans were separated into hors d`oeuvres, main meal and afters, something we still use today. Aspicius also informs us how the chefs of Roman times made use of many herbs, including many that are still in use today like basil, mint and dill. Later, in the fifteenth century, people returning from the crusades brought us many new foods, spices and herbs from Arab cuisine, including spices like parsley and basil. The introduction of these new foods and spices created an eruption in manuscripts on food, most of which still exist in private libraries. For the decades that followed, the rich and powerful families of the West tried to offer the best banquets, and because of this the best chefs and their recipe collections could command a high salary. Notwithstanding that, it wasn`t until the 19th century that formal cookery and recipe books really came of age. Mrs Isabella Beeton in the UK, and Fannie Merritt Farmer in the US, dedicated years of their lives to collecting, verifying, and recording recipes to help cooks of their time. By the time we get to the 1900s, cookery books are starting to become popular due to higher levels of literacy, people having increased spare time and having more money to spend. The arrival of television gave us celebrity TV chefs and the spin-off recipe books. Which pretty much brings us to the present day and the invention of the internet, allowing everybody to search through thousands of recipes like the ones you can find on the site you are now reading. |
