The History of Recipes
It is quite feasible to prove the history of written cooking instructions way back into ancient history, in fact as far as the early Egyptians, and potentially, even further back. Interesting though that is, in the main part, these old recipes were just very simple pictorial, hieroglyphic or cunieform instructions for preparing meals.
Interestingly, the most ancient recipe discovered, according to food historians is a collection of stone tablets in Sumerian which show the baking of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made people feel exhilarated and blissful. As we move into The time of the romans 25BC a man called Apicius compiled some scripts showing how to cook the recipes prepared by wealthy Romans. In his works, he describes how the meals of wealthy Romans were divided into hors d`oeuvres, main meal and afters, something that is very familiar to us today. Additionally, he informs us how the chefs of Roman times made use of a wide range of spices, including a few you will know like basil, rue and asafoetida. Later, in the 15th century, knights returning from the crusades brought us many new foods, spices and herbs from the holy lands, including spices like coriander, basil and rosemary. These new foods and tastes created an explosion in manuscripts on cookery, some of which are kept safe in private cookery archives. During the next few hundred years, the rich families of Europe strove to lay on the most exotic banquets, and consequentially the best chefs and their recipes could command a high salary. However, it wasn`t until the 19th century that cooking and recipe publications became popular. Mrs Beeton in the UK, and Fannie Merritt Farmer in the US, dedicated the best years of their lives to assembling, testing, and writing down recipes to help cooks of their time. By the time we get to the twentieth century, recipe books were starting to become popular due to better eduction, people having increased leisure time and having more money to spend. Like it or not, the introduction of TV brought us celebrity TV chefs and the accompanying recipe books. Which pretty much brings us up to date and the invention of the internet, allowing everyone to search through massive numbers of recipes just like those on this recipe site. |
