The History of Recipes
Academics have tracked the existance of recipes back into the far past, in fact as far back into recorded history as pharonic Egypt, and possibly even further than that. Having said that, generally, these ancient cook books were just very simple hieroglyphic or cunieform recipes for preparing food.
During Roman times around 25BC a man called Apicius created a number of documents showing how to cook the recipes enjoyed by wealthy Romans. In his scrolls, he recounts how the meals were split into hors d`oeuvre, main course and desserts, known in latin as `Gustatio, Primae Mensae and Secundae Mensae`. Additionally, he describes how the Romans were skilled in the use of a wide range of herbs and spices, including some that we all recognise like thyme, rue and dill. During the succeeding few hundred years, the rich families of Wesstern Europe strove to serve the most extravagent banquests, and as a result cooks and their recipes were at a premium. Nevertheless, it wasn`t until the nineteenth century that cookery and cookery books became really popular. Mrs Beeton in the UK, and the equally well-known Fannie Merritt Farmer in the US, spent years to assembling, verifying, and recording recipes that were common in the better off homes of the day. By the arrival of the 1900s, cooking publications are greatly in demand as a result of increased literacy, people having more free time and having more disposable income. |
