Ingredients
3 tbsp olive oil
3 large red and/or yellow peppers --
1 cut in strips
2 cup very thinly sliced onions
1 tsp minced garlic -- to taste
3/4 tsp each salt and pepper
4 tsp red wine vinegar
1/2 tsp sugar
8 skinned, boned chicken
1 thighs -- visible fat
1 removed
1 tbsp butter or margarine
Directions
Heat 2 tablespoons of the oil in a large, heavy nonstick skillet over
medium heat. Add peppers and onions and saute until soft and onions
are slightly browned, about 20 minutes. Removed from heat, stir in
the garlic, 1/4 tsp EACH of the salt and pepper, the vinegar and
sugar. Scrape into a bowl. Wipe pan clean with a paper towel.
Season chicken with remaining salt and pepper. Heat remaining 1
tablespoon oil and the butter in the skillet until bubbly. Add thighs
ad cook, turning occasionally, until opaquein center and brown on
both sides, about 20 minutes. Remove from pan and pour off fat.
Return chicken and bell pepper mixture to skillet and cook stir until
hot, about 3 minutes.

The History of Recipes
Recipes as a concept can be tracked way back into the far past, in fact as far back as the ancient Egyptians, and maybe further still. In practice though, mostly, these ancient recipes were just simple pictorial instructions for preparing meals.
Much later, in Roman times a roman called Apicius assembled a collection of documents showing how to cook the recipes cooked by the Romans. In his publication, Apicius recounts how the meals were split into starters, main meal and afters, known in latin as `Gustatio, Primae Mensae and Secundae Mensae`. Aspicius recounts how the cooks of Roman times made use of many herbs and spices, including many that are still in use today for example basil, fennel and asafoetida. Later on in the 1400s, people returning from the crusades brought back many new spices and herbs from Arab countries, including coriander, parsley, and rosemary. These new spices and herbs led to an eruption in manuscripts on food, the majority of which still exist in private libraries. The introduction of the TV gave us celebrity chefs and the accompanying recipe books. And that pretty much brings us to the present day and the invention of the internet, allowing everybody to search through massive numbers of recipes like the ones you can find on our web site. |
