The History of Recipes
Academics have traced the existance of recipes way back into history, in fact as far back into recorded history as ancient Egypt, and quite possibly further than that. Interesting though that maybe, sadly, these early cook books were just simple pictorial recipes for meal preparation.
Interestingly, the most ancient recipe found, according to experts in ancient history is a series of tablets in ancient Sumerian which describe the making of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making those who drank it feel blissful and exhilarated. During Roman times 25BC a roman called Apicius compiled a few documents showing how to cook the recipes cooked by wealthy roman citizens. In his publication, he tells us how the meals of wealthy Romans were separated into hors d`oeuvre, entrees and dessert, known in latin as `Gustatio, Primae Mensae and Secundae Mensae`. Aspicius describes how the Roman chefs used many spices, including some familiar names such as thyme, fennel and parsley. Closer to modern times, there were some interesting books which were published in the 14th Century ; a book called `Forme of Cury`, and another entitled `Curye on Inglish`. Despite their titles, these are nothing to do with the indian food that is served today, but instead accounts of the types of meals eaten by the rich and powerful of that time. In the fifteenth century, people returning from the crusades brought us a variety of foods and spices from the Middle-East, including basil and coriander. The introduction of these new culinary ideas prompted an outbreak in recipe publications, the majority of which are kept safe in private cookery archives. By the arrival of the 1900s, cookery publications are greatly in demand as a result of increased literacy, people having more leisure time and a general increase in wealth. |
