The History of Recipes
It is possible to trace the history of written recipes way back into the far past, in fact as far back as pharonic Egypt, and possibly even further. Interesting though that maybe, these, ancient cookbooks were just simple pictorial instructions for food preparation.
The truth of the matter is, the most ancient recipe discovered, according to experts is a collection of stone tablets in ancient Sumerian which recount the preparation of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making those who drank it feel exhilarated. As we move on, we have some interesting books which were published in the 1300s : a recipe book entitled `Forme of Cury`, and another entitled `Curye on Inglish`. Although the titles sound familiar, these books are nothing to do with the curry that appears on menues today, but rather descriptions of the types of meals enjoyed by the rich. Later, in the fifteenth century, knights returning from the crusades brought back a variety of foods and herbs from the holy lands, including spices such as basil and rosemary. The introduction of these new herbs and spices created an outbreak in manuscripts on food, some of which are now in academic collections. During the following few hundred years, the upper-class families of Wesstern Europe strove to offer the most extravagent meals, and consequentially chefs and their collection of recipes became highly prized. Even so, it wasn`t until the 1800s that formal cookery and recipe publications became really popular. Mrs Beeton in the UK, and the equally famous Fannie Merritt Farmer in the USA, devoted their lives to assembling, trying out, and recording recipes for their fellow cooks to enjoy. By the time we get to the 1900s, cooking books are greatly in demand mostly as a result of better eduction, more spare time and disposable income. The arrival of television brings us TV chefs and the demand for the accompanying recipe books. Which brings us neatly to the present day and the invention of the internet, permitting us all to access thousands of recipes just like those on sites such as the one you are reading now. |
