Ingredients
2 cup chopped cooked chicken
3/4 cup mayonnaise
2 scallions, minced
1/2 tsp dried basil
1/4 tsp dried thyme
1/4 tsp freshly ground pepper
1/2 cup grated swiss cheese
1/2 cup grated parmesan cheese
4 english muffins, split
Directions
1. Preheat oven to 350ø. In a medium size bowl, combine chicken,
mayonnaise & scallions. Blend in basil, thyme & pepper. Add Swiss
cheese & 2 tbsp. of the Parmesan; blend well.
2. Spread chicken mixture over English muffin 1/2's, dividing evenly.
Sprinkle w/ remaining Parmesan cheese. Arange on a foil lined baking
sheet & bake about 10 minutes until browned on top.
3. Cut muffins into 1/4's & serve hot.

The History of Recipes
Recipes as an idea can be observed back into distant history, at least as far back into recorded history as ancient Egypt, and possibly even further than that. Having said that, mostly, these early cook books were just very basic hieroglyphic instructions for food preparation.
In an interesting twist, the oldest recipe found, according to food historians is a collection of tablets in the Sumerian language which recount the making of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making people feel `blissful`. As we move into The time of the roman empire around 25BC a man called Apicius compiled some documents describing recipes prepared by the Romans. In his publication, he recounts how the meals of wealthy Romans were separated into hors d`oeuvres, main meal and desserts, a very modern way of dining. This early Roman chef describes how the Roman cooks were skilled in the use of a wide range of herbs and spices, including a few that will be familiar to modern cooks like basil, rue and parsley. Over the next few hundred years, the wealthy families of Europe competed with each other to offer the most exotic meals, and as a result cooks and their recipes were at a premium. Notwithstanding that, it wasn`t until the 19th century that fine cooking and recipe books really came of age. Mrs Isabella Beeton in the UK, and the equally well-known Fannie Farmer in the US, devoted much of their lives to assembling, verifying, and publishing recipes that were common in the better off homes of the day. When we get to the 1900s, recipe books were in great demand, mostly due to increased literacy, people having more free time and having more money to spend. The arrival of TV brought us TV cookery programs and the recipe books that accompanied them. Which brings us neatly up to date and the invention of computers and the internet, permitting us all to access massive numbers of recipes just like those on our web site. |
