Ingredients
1 cup uncooked macaroni
3/4 cup mayonnaise or salad dressing
1 tbsp finely chopped onion
1/2 tsp salt
1/4 tsp pepper
1 l/2 cups cut-up cooked chicken
1 cup chopped cucumber
Directions
Many macaroni shapes are now available. Choose from spiral, bow-tie,
elbow. ring or shell macaroni.
Cook macaroni as directed on package; drain. Rinse with cold water;
drain. Mix mayonnaise, onion, salt and pepper. Toss with macaroni,
chicken and cucumber Cover and refrigerate about 2 hours or until
chilled.

The History of Recipes
Historians have proved the existance of recipes way back into the distant past, at least as far into history as the ancient Egyptians, and quite possibly further than that. Interesting though that is, sadly, these old recipes were just primitive pictorial, hieroglyphic or cunieform instructions for preparing meals.
Interestingly, the oldest recipe discovered, according to experts is a series of stone tablets in ancient Sumerian which describe the baking of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made people feel blissful and exhilarated. During Roman times around 25BC a man called Apicius assembled a few documents detailing recipes cooked by his fellow Romans. He recounts how the meals of wealthy Romans were separated into appetizers, main meal and dessert, a very modern way of dining. Aspicius recounts how the cooks of Roman times were skilled in the use of a wide range of spices and herbs, including a few you will know for example basil, mint and parsley. In the fifteenth century, the Crusaders brought back many spices and herbs from the holy land, including spices like rosemary and coriander. These new foods and tastes created an explosion in publications on food, the majority of which are kept safe in academic collections. During the succeeding few hundred years, the powerful families of the West competed to offer the most exotic banquets, and consequentially the best chefs and their recipe collections became highly prized. However, it was during the 19th century that fine cookery and cookery books reached a high level of popularity. The Famous Mrs Beeton in the UK, and Fannie Farmer in the US, spent years to assembling, testing, and writing down recipes common in their social group. By the arrival of the 1900s, recipe books are in great demand, mostly due to better eduction, people having increased free time and disposable income. Like it or not, the introduction of television brought us TV cookery programs and the accompanying recipe books. And that pretty much brings us to the present day and the internet revolution, allowing everybody to access massive numbers of recipes just like those on this site. |
