The History of Recipes
Written cooking instructions as an idea can be observed back into ancient history, in fact as far into history as pharonic Egypt, and maybe even further. Interesting though that maybe, sadly, these old cook books were just simple pictorial, hieroglyphic or cunieform instructions for meal preparation.
During the time of the Romans a roman called Apicius assembled a number of documents describing recipes prepared by his fellow Romans. In his works, Apicius describes how the meals were divided into hors d`oeuvre, main meal and dessert, a style of dining still practiced today. Aspicius also informs us how the Romans made use of a wide range of aromatic flavors, including many that are still in use today like basil, fennel and asafoetida. Later on, in the 15th century, knights returning from the crusades brought back many foods and herbs from the East, including spices like parsley and basil. These new herbs and spices prompted an explosion in publications on food, many of which are now in private collections. The arrival of TV brings us TV cookery programs and the recipe books that accompanied them. Which pretty much brings us to the present day and the invention of the internet, permitting everyone to search through massive numbers of recipes just like those on sites such as this. |
