Ingredients
3 cup cooked chicken -- shredded
1 cup baked ham -- julienned
1/2 cup spiced cheese, leyden or
1 kuminost -- diced
1 egg yolk
1 tbsp white wine vinegar
2 tsp dijon mustard
1 dash cayenne pepper
1/3 cup salad oil
1 green onion -- thinly
1 sliced
1 shredded romain
1 tomato and hard-cooked eggs
1 for garnish
Directions
1. In a large bowl, combine chicken, ham, and cheese.
2. In a medium bowl beat egg yolk with vinegar, mustard, and cayenne.
Using a whisk or fork, gradually beat in oil until thick and creamy.
Mix in green onion.
3. Lightly mix dressing with chicken mixture. If made ahead, cover and
refrigerate. Serve on shredded romaine on individual salad plates.
Garnish with tomatoes and egg wedges.

The History of Recipes
Academics have found proof that recipes existed way back into distant history, certainly as far into history as the Egyptians, and potentially, even further back. Interesting though that is, these, ancient recipes were just simple pictorial, hieroglyphic or cunieform recipes for meal preparation.
Later on, in Roman times 25BC a roman called Apicius assembled a few documents describing recipes cooked by his fellow Romans. In his works, he describes how the roman meals were separated into appetizers, entrees and dessert, a very modern way of dining. Aspicius recounts how the Romans were skilled in the use of many herbs and spices, including a few you will know for example basil, fennel and dill. During the succeeding few centuries, the upper-class families of Wesstern Europe competed with each other to lay on the best banquets, and consequentially the best chefs and their recipe collections were at a premium. However, it was during the 1800s that haute cuisine and cookery books really came of age. The Famous Mrs Beeton in the UK, and the equally well-known Fannie Merritt Farmer in the US, devoted much of their lives to collecting, verifying, and publishing recipes of the day. By the arrival of the 1900s, cookery publications were in high demand, due to better eduction, people having increased leisure time and having more money to spend. |
