The History of Recipes
We are able to read the history of `recipes` way back into the far past, at least as far back into history as the Egypt of the Pharoahs, and possibly even further than that. However, mostly, these early recipes were just primitive hieroglyphic or cunieform recipes for food preparation.
As we move into The time of the roman empire 25BC a man called Apicius assembled a number of documents showing how to cook the recipes enjoyed by the Romans. In his scrolls, he tells us how the roman meals were separated into starters, main course and dessert, something that is very familiar to us today. Aspicius describes how the ancient cooks used many herbs, including a few that are still present in modern kitchens like basil, fennel and asafoetida. In the 15th century, the Crusaders brought back a variety of foods and herbs from Arab cooking, including spices such as basil and rosemary. These new foods and spices was responsible for an increase in recipe manuscripts, some of which are kept safe in academic collections. By the arrival of the twentieth century, recipe books are greatly in demand mostly as a result of more people being able to read, more spare time and having more money. |
