The History of Recipes
Transcribed cooking instructions as a concept can be found far back into antiquity, in fact as far back into recorded history as the Egyptians, and quite possibly further than that. Having said that, mostly, these early recipes were just simple hieroglyphic or cunieform instructions for food preparation.
Progressing into The time of the roman empire around 25BC a roman called Apicius wrote some documents showing how to cook the recipes prepared by his fellow Romans. In his scrolls, he tells us how the roman meals were split into starters, main meal and desserts, a style of dining still practiced today. He also informs us how the early Romans used many spices, including some that we all recognise like bay, fennel and dill. Over the following few centuries, the powerful and wealthy houses strove to serve the best banquets, and as a result the best cooks and their collection of recipes could command a high salary. Notwithstanding that, it was during the 19th century that cookery and recipe collections really came of age. The Famous Mrs Isabella Beeton in the UK, and the equally well-known Fannie Merritt Farmer in the USA, devoted their lives to collecting, testing, and writing down recipes that were common in the better off homes of the day. When we get to the 1900s, cook books are starting to become popular due to increased literacy, people having increased free time and having more money to spend. |
