Ingredients
8 fresh, frozen or 2 (4 oz) cans gree, n chilies
1 lb monterey jack cheese
4 eggs
4 tbsp butter, margarine or lard parsley (, garnish
Directions
Peel fresh peppers by placing on an open flame until browned. Wrap
chilies in a damp cloth to steam for five minutes. Pull peeling off.
Slit green chiles. Cut cheese into slices that will fit into the green
chile slits. (Be sure to remove seeds and membrane)
Prepare a batter by using one egg for every two chiles and one tsp of
hot water to each egg, plus enough flour (1 tbsp per egg) to make a
thin batter. Beat egg whites until they form soft peaks. Fold in
beaten egg yolks and flour.
Drop the batter (the size of a 6-in.x4-in.oval) onto a greased fry
pan. Place a stuffed chile on it and cover with batter. Cook over low
heat until golden. Turn with spatula and brown on other side. Drain
on paper towels. Place in baking dish, cover with sauce, and top with
grated cheese.

The History of Recipes
It is possible to read the history of meal recipes back into the far past, in fact as far back into recorded history as the early Egyptians, and maybe further still. Interesting though that maybe, mostly, these early recipes were just very basic hieroglyphic or cunieform recipes for preparing food.
In fact, the most ancient recipe discovered, according to experts is a series of clay tablets in Sumerian which show the baking of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making drinkers feel wonderful and blissful. Later, we have a couple of books dating from the 14th Century ; a recipe book called `Forme of Cury`, and another, similary titled `Curye on Inglish`. Although the titles sound familiar, these are not about the spicy food that is familiar to us all today, but instead descriptions of the types of food on the menus of the rich people of the time. For the decades that followed, the rich families of Wesstern Europe strove to serve the most exotic banquets, and consequentially the best cooks and their recipe collections became highly prized. Even so, it wasn`t until the nineteenth century the formal cooking and recipe collections reached a high level of popularity. Mrs Isabella Beeton in the UK, and the equally well-known Fannie Farmer in the USA, dedicated their lives to collating, verifying, and recording recipes common in their social group. By the time we get to the 1900s, cooking publications are greatly in demand mostly due to better eduction, people having more leisure time and disposable income. The arrival of television brings us TV chefs and the accompanying recipe books. Which pretty much brings us to the present day and the internet revolution, permitting everyone to search through thousands of recipes like the ones you can find on our site. |
