The History of Recipes
We can read the history of meal recipes far back into antiquity, in fact as far back into history as the ancient Egyptians, and maybe even further. Interesting though that maybe, generally, these early recipes were just very basic hieroglyphic or cunieform instructions for preparing food.
Interestingly, the oldest recipe found, according to historians is a collection of ancient tablets in ancient Sumerian which describe the preparation of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making drinkers feel exhilarated. As we move into The time of the romans 25BC a man called Apicius assembled a number of scripts detailing recipes cooked by his fellow Romans. In his works, he recounts how the roman meals were split into appetizers, main meal and dessert, something we still use today. This early Roman chef informs us how the cooks of his times were skilled in the use of a wide range of spices and herbs, including some that we all recognise like thyme, rue and asafoetida. Later, in the 15th century, the Crusaders brought back many foods and herbs from the Middle-East, including spices such as coriander, parsley, and rosemary. The introduction of these new culinary ideas created an eruption in publications on food, many of which are now in academic collections. By the time we get to the twentieth century, recipe publications were in great demand, mostly as a result of increased literacy, increased leisure time and having more money. Like it or not, the introduction of TV brought us TV cookery programs and the demand for the accompanying recipe books. Which brings us neatly up to date and the invention of the internet, allowing everyone to access massive numbers of recipes just like those on this recipe site. |
