The History of Recipes
It is possible to follow the history of written recipes back into the distant past, certainly as far back into history as the Egyptians, and possibly even further than that. Interesting though that maybe, in the main part, these ancient records were just very simple pictorial instructions for meal preparation.
Fascinatingly, the most ancient recipe discovered, according to experts is a series of ancient tablets in ancient Sumerian which show the making of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made drinkers feel blissful and exhilarated. As we move into The time of the roman empire around 25BC a man called Apicius assembled a number of documents showing how to cook the recipes prepared by wealthy roman citizens. In his publication, Apicius describes how the roman meals were separated into starters, main meal and afters, known in latin as `Gustatio, Primae Mensae and Secundae Mensae`. Additionally, he tells us how the ancient cooks used a good variety of spices and herbs, including a few that will be familiar to modern chefs such as basil, fennel and parsley. Moving our culinary historical trip onwards, there are two books from the 1300s - a recipe book called `Forme of Cury`, and another entitled `Curye on Inglish`. The titles are a little misleading though, they have no connection with the curry that is served today, but rather recipes for the types of meals served to the rich and powerful. In the 15th century, the Crusaders brought back many new foods, spices and herbs from the holy land, including spices such as coriander, parsley, and basil. These new culinary innovations led to an explosion in manuscripts on cooking, some of which still exist in private libraries. When we get to the 1900s, recipe books are starting to become popular due to better eduction, more spare time and disposable income. The arrival of TV brought us celebrity TV chefs and the spin-off recipe books. Which pretty much brings us up to date and the invention of computers and the internet, allowing us all to search through thousands of recipes such as those found on this site. |
