Ingredients
10 garlic, crushed
2 tbsp butter or oil
1 medium onion, minced
1 large green pepper, minced
3 mushrooms, chopped
1/4 cup celery, chopped (opt)
1 lb pork, minced, with fat
1 tsp chili powder
2 tomatoes (or 3), peeled and
1 ; chopped
2 cup kidney beans (canned)
1 ; drained
1/2 cup water
1 salt
Directions
Rub heavy skillet with crushed clove of garlic. Melt butter in
skillet. Add onion and green pepper and cook for a few minutes but do
not brown. Add mushrooms and celery and cook without browning. Add
pork and cook until lightly browned. Add chili powder and mix well.
Add tomatoes, beans, water and season to taste with salt. Cover and
cook gently 30 to 45 minutes. Makes 4 to 6 servings.

The History of Recipes
Academics have tracked the existance of recipes way back into ancient history, at least as far back into recorded history as the early Egyptians, and potentially, even further back. Interesting though that maybe, generally, these old cook books were just primitive hieroglyphic instructions for preparing meals.
During Roman times around 25BC a man called Apicius compiled some documents describing recipes enjoyed by wealthy Romans. In his scrolls, he describes how the roman meals were split into hors d`oeuvres, entrees and dessert, something that is very familiar to us today. This early Roman chef describes how the early Romans used many different herbs, including some that we all recognise such as basil, rue and dill. In the fifteenth century, knights returning from the crusades brought us many foods, spices and herbs from the Middle-East, including spices like coriander, parsley, and basil. These new spices and herbs created a surge in publications on food, some of which still exist in private libraries. Like it or not, the introduction of television brought us cooking programs and the spin-off recipe books. Which brings us neatly up to date and the internet revolution, permitting everybody to search through thousands of recipes like those on the site you are now reading. |
