The History of Recipes
It is quite feasible to follow the history of written cooking instructions way back into distant history, at least as far back into recorded history as the ancient Egyptians, and possibly even further than that. Having said that, in the main part, these early cookbooks were just primitive pictorial recipes for food preparation.
In an interesting twist, the oldest recipe found, according to historians is a collection of tablets in ancient Sumerian describing the baking of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making people feel `blissful`. Progressing into Roman times 25BC a man called Apicius created some documents describing recipes prepared by the Romans. In his scrolls, he recounts how the meals were split into appetizers, main meal and desserts, a very modern way of dining. Additionally, he describes how the ancient chefs were skilled in the use of many different spices and herbs, including a few that are still present in modern kitchens like thyme, mint and parsley. Later on, in the 15th century, knights returning from the crusades brought back many spices and herbs from the East, including spices like basil and rosemary. The introduction of these new foods and spices led to an explosion in books on cooking, the majority of which still exist in private collections. Over the succeeding few centuries, the rich families of the West competed with each other to offer the most exotic meals, and as a result the best chefs and their collection of recipes were much in demand. Nevertheless, it was during the nineteenth century that cookery and recipe publications became really popular. The Famous Mrs Beeton in the UK, and the equally well-known Fannie Merritt Farmer in the US, devoted much of their lives to collecting, testing, and publishing recipes to allow everyone to enjoy them. By the arrival of the 1900s, cookery publications were starting to become popular due to more people being able to read, increased leisure time and disposable income. |
