The History of Recipes
It is quite possible to track the history of written cooking instructions far back into history, certainly as far back into recorded history as the ancient Egyptians, and possibly even further than that. Having said that, these, old records were just very simple pictorial recipes for preparing food.
Interestingly, the oldest recipe discovered so far, according to academics are a few tablets in ancient Sumerian describing the making of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made drinkers feel `exhilarated, wonderful and blissful`. Progressing into The time of the romans around 25BC a roman called Apicius wrote a number of documents detailing recipes prepared by his fellow Romans. In his publication, Apicius tells us how the roman meals were split into hors d`oeuvre, entrees and dessert, something that is very familiar to us today. This early Roman chef describes how the Romans were skilled in the use of a wide range of spices and herbs, including a few that will be familiar to modern chefs such as thyme, mint and asafoetida. During the next few hundred years, the powerful and rich houses competed to serve the most exotic banquets, and because of this cooks and their collection of recipes were at a premium. Notwithstanding that, it wasn`t until the 1800s that haute cuisine and recipe publications really came of age. Mrs Isabella Beeton in the UK, and the equally well-known Fannie Merritt Farmer in the US, devoted much of their lives to assembling, testing, and publishing recipes for their fellow cooks to enjoy. By the time we get to the twentieth century, cook books were highly popular mostly due to higher levels of literacy, people having more free time and having more disposable income. Like it or not, the introduction of TV gave us TV cooks and the accompanying recipe books. Which brings us neatly up to date and the invention of computers and the internet, permitting everyone to access massive numbers of recipes just like those on this site. |
