The History of Recipes
We can trace the history of meal recipes way back into ancient history, in fact as far back into history as the ancient Egyptians, and quite possibly further than that. However, generally, these old cookbooks were just basic hieroglyphic or cunieform instructions for preparing food.
In fact, the most ancient recipe discovered so far, according to experts are a few ancient tablets in ancient Sumerian which show the making of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making drinkers feel wonderful and blissful. Progressing into The time of the romans around 25BC a roman called Apicius assembled a collection of documents describing recipes enjoyed by wealthy Romans. In his scrolls, he describes how the meals of wealthy Romans were split into appetizers, main meal and desserts, something we still use today. Aspicius also tells us how the Roman cooks used a good variety of aromatic flavours, including a few you will know for example bay, fennel and dill. Moving on, we have a couple of interesting books dating from the fourteenth century ; a cookery book called `Forme of Cury`, and another, similary titled `Curye on Inglish`. Surprisingly, these two books are unconnected to the indian curry that is familiar to us all today, but instead descriptions of the types of food served to the rich and powerful of that period. Later, in the 15th century, knights returning from the crusades brought back many spices and herbs from middle-east cuisine, including spices like basil and coriander. These new herbs and spices led to an eruption in recipe books, many of which are kept safe in academic collections. During the next few hundred years, the upper-class families of Europe competed with each other to serve up the most exotic banquets, and because of this the best chefs and their recipe collections could command a high salary. Nevertheless, it was during the 19th century that cookery and recipe collections became popular. Mrs Isabella Beeton in the UK, and the equally well-known Fannie Farmer in the US, dedicated their lives to collecting, trying out, and writing down recipes common in their social group. By the time we get to the twentieth century, cooking books are in high demand, mostly due to higher levels of literacy, people having increased spare time and having more money to spend. |
