The History of Recipes
Recipes as an idea can be tracked back into the far past, certainly as far back as pharonic Egypt, and quite possibly further than that. In practice though, in the main part, these ancient records were just very simple pictorial instructions for food preparation.
Interestingly, the most ancient recipe in existence, according to Professor Solomon Katz, are some ancient tablets in the Sumerian language which show the making of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making drinkers feel exhilarated and blissful. Closer to modern times, we find two interesting recipe books dating from the fourteenth century ; a recipe book titled `Forme of Cury`, and another named `Curye on Inglish`. The titles are a little misleading though, these two books are nothing to do with the indian curry that we all know today, but instead descriptions of the types of meals prepared by the chefs of the rich and powerful of that period. In the fifteenth century, people returning from the crusades brought back many new spices and herbs from Arab cooking, including spices like basil and coriander. The introduction of these new tastes led to a surge in books on cookery, most of which are kept safe in academic collections. During the succeeding few hundred years, the powerful and rich tried to serve up the most exotic banquets, and as a consequence, the best chefs and their recipe collections were highly sought after. Notwithstanding that, it was during the 1800s that fine cooking and recipe books became popular. The Famous Mrs Beeton in the UK, and Fannie Farmer in the US, devoted their lives to collecting, testing, and writing down popular recipes of the day. By the arrival of the 1900s, cookbooks are increasing in popularity mostly due to more people being able to read, people having increased leisure time and being a little richer. Like it or not, the introduction of television gave us celebrity chefs and the accompanying recipe books. And that brings us to the present day and the internet revolution, allowing everybody to access thousands of recipes such as those found on this recipe site. |
