Ingredients
2 can (8 oz. ea.) green chilies
1 lb jack cheese, sliced
1 lb cheddar cheese, sliced
4 tbsp whole wheat flour
1 cup evaporated milk
1 cup sour cream
4 eggs
1 cup diced chicken or turkey
2 cup mild salsa
Directions
Cut chilies open and line 8" x 13" baking dish with them. Layer both
cheeses evenly over chilies. Add any remaining chilies over the
cheese layer. Mix flour with small amount of milk; using a wire
whisk helps to make a smooth paste. Mix in remaining milk and sour
cream. Beat in eggs, one at a time; add diced meat. Pour over chilies
and cheese; bake for 30 minutes at 350 degrees. Pour salsa over top
and bake an additional 15 minutes.

The History of Recipes
Experts have found proof that recipes existed back into the far past, certainly as far as ancient Egypt, and quite possibly further than that. In practice though, in the main part, these old cookbooks were just very basic hieroglyphic or cunieform instructions for food preparation.
Interestingly, the oldest recipe in existence, according to Professor Solomon Katz, is a series of tablets in ancient Sumerian which describe the preparation of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making people feel wonderful. During Roman times 25BC a man called Apicius created a number of scripts detailing recipes prepared by wealthy roman citizens. In his publication, Apicius describes how the meals of wealthy Romans were separated into hors d`oeuvre, main meal and desserts, known in latin as `Gustatio, Primae Mensae and Secundae Mensae`. He also describes how the ancient chefs made use of many spices and herbs, including many that are still in use today like bay, mint and parsley. During the succeeding few centuries, the rich families of the West competed to lay on the most exotic meals, and as a consequence, the best cooks and their recipe collections were greatly in demand. Notwithstanding that, it wasn`t until the 19th century that fine cooking and recipe publications became really popular. The Famous Mrs Isabella Beeton in the UK, and the equally famous Fannie Merritt Farmer in the USA, dedicated years of their lives to collating, testing, and recording recipes to help cooks of their time. Like it or not, the introduction of television brings us TV cooks and the recipe books that accompanied them. And that neatly brings us to the present day and the internet revolution, permitting us all to search through thousands of recipes like the ones you can find on this site. |
