The History of Recipes
It is quite feasible to follow the history of written cooking instructions way back into distant history, in truth as far back as the ancient Egyptians, and possibly even further. Having said that, mostly, these early records were just primitive hieroglyphic or cunieform instructions for preparing food.
Fascinatingly, the most ancient recipe discovered so far, according to academics is a series of clay tablets in ancient Sumerian describing the baking of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making drinkers feel exhilarated. Progressing into The time of the roman empire around 25BC a roman called Apicius created a few documents which described recipes prepared by his fellow Romans. In his publication, he recounts how the meals of wealthy Romans were separated into appetizers, main meal and desserts, something that is very familiar to us today. He also tells us how the Roman chefs were skilled in the use of a good variety of herbs and spices, including a few you will know for example thyme, fennel and dill. In the 15th century, people returning from the crusades brought us many new foods, spices and herbs from Arab cuisine, including basil and coriander. The introduction of these new foods and spices led to an explosion in recipe books, some of which are kept safe in academic collections. The arrival of TV gave us celebrity chefs and the spin-off recipe books. And that neatly brings us to the present day and the invention of computers and the internet, allowing us all to access massive numbers of recipes such as those found on our site. |
