The History of Recipes
Written cooking instructions as a concept can be tracked far back into the far past, in truth as far as early Egypt, and maybe further still. Having said that, mostly, these old cookbooks were just very basic pictorial, hieroglyphic or cunieform recipes for meal preparation.
Later on, in The time of the roman empire 25BC a man called Apicius created some documents showing how to cook the recipes prepared by wealthy roman citizens. In his scrolls, he tells us how the roman meals were split into hors d`oeuvres, main meal and dessert, something that is very familiar to us today. He also informs us how the early Romans used many herbs and spices, including some that we all recognise such as bay, rue and dill. For the decades that followed, the rich families of the West strove to lay on the most extravagent banquests, and as a consequence, cooks and their collection of recipes increased in prestige. Notwithstanding that, it wasn`t until the 19th century that haute cuisine and recipe publications became really popular. The Famous Mrs Isabella Beeton in the UK, and the equally well-known Fannie Merritt Farmer in the USA, dedicated their lives to collating, verifying, and writing down popular recipes of the day. By the time we get to the 1900s, cooking publications were starting to become popular as a result of more people being able to read, people having more free time and a general increase in wealth. |
