Ingredients
1 big jalapeno
2 cuban frying peppers
1 hot hungarian,
1 long cheese pepper
1 and a little paprika)
1 cup dried black beans
1 cup dried pinto beans
1 cup dried kidney beans
2 onions (white and yellow?)
3 garlic cloves
1 tomatoes (3 big beefsteak or
1 about 8 roma)
1 cumin, coriander, oregano,
1 salt, pepper to taste
1 olive oil
Directions
Soak the beans overnight, then simmer until tender (1 to 2 hours) I
tend to add some seaweed while cooking (dump in a bowl so you can use
the bean pot for frying) roast the cumin in a frying pan (optional,
but valuable) I used about 2 to 3 tsp chop onions and garlic, saute
in oil chop peppers, saute with onion & garlic add chopped tomatoes,
cook a until soft Add the beans, and some bean liquid Add the spices
and cook for another hour or so

The History of Recipes
We can trace the history of written recipes back into the far past, certainly as far back into history as pharonic Egypt, and maybe even further. Having said that, sadly, these early records were just very basic hieroglyphic or cunieform recipes for food preparation.
In fact, the oldest recipe found, according to historians is a collection of clay tablets in Sumerian which show the making of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made anyone who tried it feel wonderful and blissful. Later, we have a couple of interesting books dating from the fourteenth century : one book entitled `Forme of Cury`, and another, similary named `Curye on Inglish`. Don`t be fooled by the titles though, they have no connection with the spicy food that we all know today, but instead recipes for the types of meals prepared by the chefs of the rich and powerful of those days. Later on in the 1400s, knights returning from the crusades brought us many foods, spices and herbs from the Middle-East, including spices like coriander, parsley, basil and rosemary. These new culinary innovations was responsible for an explosion in books on cooking, most of which are kept safe in private collections. For the decades that followed, the wealthy families of Europe competed with each other to serve up the most exotic banquets, and as a result the best chefs and their collection of recipes were greatly in demand. Notwithstanding that, it was during the 19th century the formal cooking and recipe books reached a high level of popularity. Mrs Beeton in the UK, and the equally well-known Fannie Merritt Farmer in the USA, devoted their lives to assembling, verifying, and recording popular recipes of the day. The arrival of television brought us TV cookery programs and the accompanying recipe books. Which brings us neatly to the present day and the invention of computers and the internet, permitting everybody to access thousands of recipes like those on the site you are now reading. |
