The History of Recipes
It is possible to follow the history of `recipes` far back into ancient history, at least as far as the Egypt of the Pharoahs, and quite possibly further than that. In practice though, generally, these ancient cook books were just basic pictorial recipes for preparing meals.
In fact, the oldest recipe in existence, according to historians are a few tablets in Sumerian which recount the baking of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made anyone who tried it feel `wonderful`. Later on, in The time of the romans around 25BC a roman called Apicius created a collection of documents describing recipes enjoyed by wealthy roman citizens. He recounts how the roman meals were separated into hors d`oeuvres, entrees and dessert, known in latin as `Gustatio, Primae Mensae and Secundae Mensae`. Aspicius also informs us how the cooks of his times used a good variety of herbs, including many that are still in use today such as basil, rue and asafoetida. Later, in the 15th century, people returning from the crusades brought back many foods, spices and herbs from the holy land, such as rosemary and coriander. The introduction of these new herbs and spices created a torrent in manuscripts on food, the majority of which are kept safe in private cookery archives. During the following few centuries, the powerful and wealthy competed with each other to lay on the best banquets, and consequentially cooks and their recipe collections were greatly in demand. Even so, it was during the nineteenth century that formal cookery and cookery books became popular. The Famous Mrs Isabella Beeton in the UK, and the equally famous Fannie Farmer in the US, devoted much of their lives to collecting, verifying, and publishing the recipes of their peers. The revolution that is television gave us cooking programs and the spin-off recipe books. And that pretty much brings us to the present day and the internet revolution, allowing everyone to access massive numbers of recipes such as those found on this web site. |
