The History of Recipes
Academics have proved the existence of recipes way back into history, in fact as far back as early Egypt, and maybe further still. Having said that, in the main part, these old records were just very simple hieroglyphic or cunieform instructions for meal preparation.
As we move into The time of the roman empire 25BC a roman called Apicius compiled a few documents showing how to cook the recipes cooked by the Romans. In his publication, Apicius recounts how the meals of wealthy Romans were separated into hors d`oeuvre, main meal and afters, known in latin as `Gustatio, Primae Mensae and Secundae Mensae`. Aspicius also informs us how the chefs of Roman times made use of many spices, including a few that will be familiar to modern cooks such as bay, fennel and asafoetida. In the 15th century, knights returning from the crusades brought back a variety of foods and herbs from the holy lands, including coriander, parsley, basil and rosemary. The introduction of these new foods and spices caused an eruption in manuscripts on cooking, some of which are now in private libraries. By the arrival of the twentieth century, cookery publications are greatly in demand mostly as a result of better eduction, people having more leisure time and disposable income. |
