Ingredients
1 1/2 lb ground beef or stringy beef
1 pt sour cream
2 onions
2 or 3 cloves garlic
1 pt whole, peeled tomatoes
1 lb jack cheese, sliced or
1 shredded
1 several slices american or
1 other mild
1 yellow cheeses
1 pinch oregano and cumin
1/2 tsp ground coriander
1 corn tortillas
1 wheat tortillas- use one
1 dozen
1 salt and pepper
Directions
Brown meat in skillet with onions, garlic and spices, then layer in a
deep round dish, alternating with both kinds of tortillas and the
other ingredients, reserving the yellow cheese. Bake for 30 to 40
minutes at 350 F. and top with the yellow cheese for the last
10 minutes.

The History of Recipes
Experts have traced the existance of recipes way back into history, in truth as far back into history as the early Egyptians, and maybe even further. Interesting though that maybe, sadly, these ancient cookbooks were just very basic pictorial, hieroglyphic or cunieform recipes for meal preparation.
During Roman times 25BC a roman called Apicius compiled a collection of scripts which described recipes enjoyed by the Romans. In his works, Apicius recounts how the meals were separated into starters, main course and afters, known in latin as `Gustatio, Primae Mensae and Secundae Mensae`. Additionally, he informs us how the Roman cooks were skilled in the use of a wide range of herbs and spices, including some familiar names like bay, rue and asafoetida. During the succeeding few centuries, the rich and powerful families of Europe tried to serve up the best banquets, and as a result chefs and their collection of recipes were at a premium. Even so, it was during the nineteenth century the formal cooking and recipe publications rose to prominence. Mrs Beeton in the UK, and the equally well-known Fannie Farmer in the US, spent years to assembling, verifying, and writing down recipes to help cooks of their time. By the arrival of the 1900s, cookery publications are increasing in popularity due to increased literacy, leisure time and having more money to spend. |
