The History of Recipes
Written recipes as an idea can be observed far back into the far past, in truth as far into history as the early Egyptians, and potentially, even further back. Interesting though that is, sadly, these early cookbooks were just very basic pictorial, hieroglyphic or cunieform recipes for meal preparation.
In an interesting twist, the most ancient recipe found, according to experts in ancient history are some stone tablets in Sumerian which recount the making of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made anyone who drank it feel `blissful`. Much later, in Roman times a roman called Apicius created a number of documents which described recipes cooked by wealthy Romans. He recounts how the meals of wealthy Romans were separated into hors d`oeuvre, entrees and dessert, known in latin as `Gustatio, Primae Mensae and Secundae Mensae`. He also describes how the Roman chefs were skilled in the use of many different aromatic flavors, including a few you will know for example bay, mint and dill. Continuing our culinary historical journey, we find two interesting recipe books dating from the fourteenth century : a book titled `Forme of Cury`, and another titled `Curye on Inglish`. The titles are somewhat misleading tho`, these are nothing to do with the curry that is served today, but instead recipes for the types of food prepared for the upper classes of the period. Later on, in the 15th century, people returning from the crusades brought us many new spices and herbs from the Middle-East, including spices like parsley, basil and rosemary. These new foods and tastes caused a surge in manuscripts on food, the majority of which are kept safe in private libraries. When we get to the twentieth century, cookbooks were starting to become popular mostly due to increased literacy, people having increased leisure time and a general increase in wealth. |
