Chilli Chicken Recipe


Ingredients

125 g butter
1 or ghee (1/8 lb)
1 tbsp cinnamon
2 tsp cardamon
1 tsp black pepper
1 tsp cloves
3 cl garlic - crushed
4 onions finely sliced
1 tbsp finely chopped ginger
1 kg chicken pieces (2.2 lb)
1 thigh fillets
2 cup plain yoghurt
1 tsp chilli powder
1 tsp salt
1/4 tsp saffron
1 cup coconut cream
3 tbsp slivered roasted almonds


Directions

Fry cinnamon, cardamon, pepper and cloves. Add garlic and ginger and
cook for 5-8 minutes, stirring to prevent burning. Toss through the
chicken, and cook a further 5 minutes. Combine chilli, yoghurt, salt,
and saffron and add to the chicken. Cook until tender. Add coconut
cream and almonds, and cook further 5 minutes to allow sauce to
reduce. WALT

Aspicius describes how the ancient cooks made use of many aromatic flavours, including many that are still in use today like bay, fennel and asafoetida.

In the fifteenth century, people returning from the crusades brought us many foods and spices from the Middle-East, including spices such as parsley, basil and rosemary. The introduction of these new herbs and spices led to a torrent in manuscripts on cooking, some of which are kept safe in private cookery archives.

By the arrival of the 20th century, cookery publications are in great demand, as a result of increased literacy, increased leisure time and a general increase in wealth.

The introduction of television brings us TV cookery programs and the demand for the spin-off recipe books.

And that brings us to the present day and the internet revolution, allowing everyone to search through massive numbers of recipes like the ones you can find on sites such as the one you are reading now.
