Chinese Barbecue Pork - Char Siew Recipe


Ingredients

2 1/2 lb boneless pork roast

SAUCE

1 tbsp hoisin sauce
2 tbsp soy sauce
1 tsp sesame oil
1 fresh garlic finely chopped
4 tbsp sugar
1/2 tsp salt and pepper


Directions

Slice pork into strips approximately 1 1/2 in. thick, 5-6 in. long,
and 1/2 in. wide. Combine all the ingredients for the sauce and mix
well. Marinate pork strips in sauce for a minimum of 2 hours. Bake in
pre-heated 375øF oven for 25 minutes. Turn meat over and bake for an
additional 25 minutes.

The History of Recipes

Written recipes as a concept can be traced way back into history, at least as far back into recorded history as the ancient Egyptians, and quite possibly further than that. However, mostly, these early cookbooks were just very simple pictorial recipes for preparing meals.

In his publication, Apicius tells us how the meals were separated into hors d`oeuvre, entrees and desserts, something that is very familiar to us today. This early Roman chef tells us how the Romans were skilled in the use of many spices and herbs, including a few that are still present in modern kitchens like basil, fennel and dill.

Later on, in the 15th century, knights returning from the crusades brought back many spices and herbs from the Middle-East, including rosemary and coriander. These new herbs and spices caused a surge in books on cooking, some of which are now in private collections.

Over the succeeding few hundred years, the upper-class families of the West competed with each other to offer the most exotic meals, and as a result the best cooks and their recipe collections were greatly in demand. Even so, it wasn`t until the 1800s that fine cooking and recipe publications rose to prominence. Mrs Isabella Beeton in the UK, and the equally well-known Fannie Merritt Farmer in the US, devoted much of their lives to collecting, testing, and recording recipes that were common in the better off homes of the day.

When we get to the twentieth century, cookery publications are in great demand, mostly due to increased literacy, people having increased free time and having more money.

The TV revolution brings us TV cookery programs and the recipe books that accompanied them.

Which brings us neatly up to date and the invention of computers and the internet, permitting everybody to access massive numbers of recipes like the ones you can find on this site.
