The History of Recipes
Written cooking instructions as a concept can be tracked back into ancient history, certainly as far back into recorded history as the early Egyptians, and potentially, even further back. In practice though, generally, these old cook books were just simple pictorial recipes for preparing food.
In an interesting twist, the oldest recipe in existence, according to academics are a few tablets in the Sumerian language describing the making of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made drinkers feel `wonderful`. Later on, in The time of the romans 25BC a man called Apicius created a number of scripts detailing recipes prepared by his fellow Romans. In his scrolls, Apicius recounts how the meals were separated into starters, entrees and desserts, a very modern way of dining. Additionally, he tells us how the Romans used many spices and herbs, including some familiar names such as basil, rue and dill. Later on, in the 15th century, knights returning from the crusades brought us a variety of foods, spices and herbs from Arab cooking, including spices like coriander, parsley, and rosemary. These new culinary innovations led to an outbreak in books on cookery, most of which are now in private cookery archives. Over the succeeding few centuries, the rich families of the West competed to serve the best banquets, and as a consequence, the best chefs and their recipes were much in demand. Notwithstanding that, it was during the 1800s that fine cooking and recipe books became popular. Mrs Beeton in the UK, and the equally well-known Fannie Merritt Farmer in the US, devoted their lives to collating, testing, and writing down the recipes that were being prepared for the better households. When we get to the 20th century, cooking publications were highly popular due to more people being able to read, people having increased leisure time and having more disposable income. |
