The History of Recipes
It is quite feasible to trace the history of transcribed cooking instructions back into antiquity, at least as far as pharonic Egypt, and potentially, even further back. However, these, old records were just simple hieroglyphic or cunieform instructions for preparing meals.
Interestingly, the oldest recipe found, according to experts are some ancient tablets in ancient Sumerian which recount the making of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made anyone who drank it feel wonderful and blissful. Later on, in Roman times around 25BC a man called Apicius created a collection of scripts detailing recipes cooked by his fellow Romans. In his works, Apicius tells us how the meals were separated into hors d`oeuvres, main meal and desserts, something that is very familiar to us today. Additionally, he describes how the Romans used many different spices, including some familiar names for example basil, fennel and asafoetida. For the next few years, the rich families of Europe competed to offer the most extravagent meals, and as a result cooks and their recipes were much in demand. Nevertheless, it wasn`t until the 19th century that fine cooking and recipe publications became really popular. Mrs Beeton in the UK, and the equally well-known Fannie Merritt Farmer in the US, devoted their lives to assembling, testing, and writing down recipes common in their social group. The introduction of the TV brought us TV cookery programs and the demand for the accompanying recipe books. Which brings us neatly to the present day and the internet revolution, permitting everybody to access thousands of recipes like those on this recipe site. |
