Ingredients
2 tbsp whole star anise (about 10)
1 tbsp szcchuan peppercorns
1 stick cinnamon
2 tbsp fennel seeds
1/2 tsp whole cloves
Directions
1. Place all ingredients in a saute pan over medium heat and
dry-roast, shaking pan often, until they give off an aroma, about 5
minutes.
2. Transfer to a mortar or a clean coffee grinder and grind to a
powder. Store in an airtight container.

The History of Recipes
We are able to trace the history of written recipes way back into the far past, at least as far back into recorded history as the early Egyptians, and maybe even further. In practice though, generally, these ancient records were just very basic pictorial, hieroglyphic or cunieform recipes for preparing meals.
The truth of the matter is, the oldest recipe discovered, according to experts in ancient history are a few ancient tablets in the Sumerian language describing the making of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making anyone who drank it feel `exhilarated, wonderful and blissful`. As we move on, we have a couple of interesting books dating from the 1300s ; a book published under the title `Forme of Cury`, and another called `Curye on Inglish`. Don`t be fooled by the titles though, they are not about the indian curry that we all know today, but instead accounts of the types of meals eaten by the upper classes of that time. During the next few centuries, the upper-class families of Europe competed with each other to serve up the most exotic banquets, and consequentially chefs and their recipe collections could command a high salary. Notwithstanding that, it was during the nineteenth century that cookery and cookery books rose to prominence. Mrs Isabella Beeton in the UK, and Fannie Farmer in the US, dedicated years of their lives to assembling, testing, and publishing the recipes that were being prepared for the better households. The revolution that is television brings us TV cookery programs and the accompanying recipe books. Which pretty much brings us to the present day and the invention of the internet, allowing everybody to search through massive numbers of recipes just like those on this site. |
