The History of Recipes
Food historians have proved the existance of recipes far back into history, at least as far back into history as the Egypt of the Pharoahs, and quite possibly further than that. In practice though, these, old cookbooks were just very basic pictorial recipes for preparing meals.
As we move into The time of the romans around 25BC a man called Apicius created a number of scripts describing recipes prepared by wealthy roman citizens. In his publication, Apicius tells us how the roman meals were split into hors d`oeuvre, main course and afters, known in latin as `Gustatio, Primae Mensae and Secundae Mensae`. This early Roman chef recounts how the early Romans made use of a good variety of herbs, including some familiar names like thyme, rue and dill. During the next few centuries, the rich families of the West competed with each other to offer the most exotic banquets, and as a consequence, the best cooks and their collection of recipes were much in demand. Notwithstanding that, it wasn`t until the nineteenth century that cooking and cookery books became popular. The Famous Mrs Beeton in the UK, and the equally well-known Fannie Merritt Farmer in the USA, dedicated years of their lives to collecting, verifying, and writing down recipes that were common in the better off homes of the day. By the advent of the 20th century, cooking publications were in great demand, mostly due to more people being able to read, people having more leisure time and having more money. |
