The History of Recipes
Written recipes as a concept can be found way back into the distant past, at least as far back into recorded history as the early Egyptians, and quite possibly further than that. However, mostly, these early cook books were just primitive hieroglyphic or cunieform recipes for food preparation.
In an interesting twist, the oldest recipe in existence, according to Professor Solomon Katz, are a few ancient tablets in ancient Sumerian describing the preparation of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making drinkers feel `exhilarated, wonderful and blissful`. Moving our culinary historical trip onwards, we have a couple of recipe books which appeared in the 1300s : one book published under the title `Forme of Cury`, and another, similary called `Curye on Inglish`. Amusingly, these books are unconnected to the indian food that is popular today, but rather accounts of the types of meals on the tables of the rich people of the time. In the 15th century, knights returning from the crusades brought us a variety of foods and herbs from Arab countries, including spices such as parsley, basil and rosemary. These new herbs and spices created a torrent in recipe publications, many of which are now in private libraries. Over the next few hundred years, the rich families of Wesstern Europe competed to serve up the most exotic meals, and as a consequence, chefs and their collection of recipes were greatly in demand. Even so, it wasn`t until the nineteenth century that haute cuisine and recipe collections rose to prominence. Mrs Isabella Beeton in the UK, and the equally famous Fannie Merritt Farmer in the USA, dedicated their lives to collecting, testing, and publishing popular recipes of the day. When we get to the 1900s, cooking publications were highly popular mostly as a result of more people being able to read, leisure time and being a little richer. The arrival of TV brings us TV cooks and the recipe books that accompanied them. Which brings us neatly up to date and the internet revolution, permitting us all to search through thousands of recipes such as those found on this recipe site. |
