Ingredients
1 cup sugar
1/2 cup canola oil (vegetable oil)
2 eggs
1 tsp vanilla extract
3/4 cup self rising flour
1/2 tsp peppermint extract
1/2 cup walnuts or pecans, chopped
6 tbsp cocoa
Directions
Combine all ingredients in a large bowl and beat at medium speed of an
electric mixer until all of the ingredients are well blended. Pour
into a buttered and floured 8x8x2 inch baking pan. Bake on top rack
of a 325 degree F oven for 30 to 35 min, or until toothpick inserted
into center comes out clean. Allow to coll completely before cutting.
NOTE: If using a glass baking dish reduce heat to 300 deg.F to prevent
burning.

The History of Recipes
Academics have tracked the existance of recipes far back into the distant past, in truth as far back as the ancient Egyptians, and maybe even further. Having said that, mostly, these early records were just simple pictorial recipes for food preparation.
Interestingly, the most ancient recipe in existence, according to historians are some tablets in Sumerian which describe the baking of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making drinkers feel exhilarated and blissful. During Roman times around 25BC a roman called Apicius created a few scripts which described recipes cooked by his fellow Romans. In his scrolls, he tells us how the roman meals were split into hors d`oeuvre, main course and dessert, something we still use today. Aspicius recounts how the ancient cooks used a wide range of spices, including a few that are still present in modern kitchens for example thyme, mint and asafoetida. In the fifteenth century, people returning from the crusades brought us many new spices and herbs from Arab countries, including spices such as basil and rosemary. The introduction of these new foods and spices prompted an increase in recipe manuscripts, most of which are kept safe in private collections. During the succeeding few hundred years, the families of Europe tried to offer the most exotic banquets, and as a consequence, chefs and their collection of recipes were much in demand. Notwithstanding that, it wasn`t until the nineteenth century that haute cuisine and recipe books reached a high level of popularity. The Famous Mrs Beeton in the UK, and the equally famous Fannie Farmer in the USA, devoted their lives to assembling, testing, and recording recipes of the day. By the arrival of the 1900s, cookbooks were starting to become popular mostly due to more people being able to read, leisure time and having more money. Like it or not, the introduction of television gave us celebrity TV chefs and the accompanying recipe books. And that brings us to the present day and the invention of the internet, allowing us all to access thousands of recipes just like those on this recipe site. |
