The History of Recipes
Experts have traced the existance of recipes back into antiquity, certainly as far back into history as early Egypt, and possibly even further than that. Interesting though that is, mostly, these old cook books were just basic hieroglyphic recipes for preparing food.
Interestingly, the oldest recipe discovered so far, according to Professor Solomon Katz, are some stone tablets in ancient Sumerian which show the baking of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making anyone who tried it feel exhilarated and blissful. During Roman times 25BC a man called Apicius assembled some documents detailing recipes enjoyed by his fellow Romans. In his scrolls, Apicius recounts how the meals of wealthy Romans were split into appetizers, entrees and dessert, known in latin as `Gustatio, Primae Mensae and Secundae Mensae`. He also describes how the chefs of Roman times used a wide range of herbs, including some familiar names such as basil, mint and asafoetida. Later on in the 1400s, knights returning from the crusades brought us many new foods and spices from Arab cuisine, including spices like basil and rosemary. The introduction of these new tastes was responsible for an increase in recipe publications, many of which are kept safe in private collections. By the advent of the twentieth century, cooking publications are starting to become popular as a result of higher levels of literacy, people having increased leisure time and disposable income. The introduction of the TV brings us celebrity TV chefs and the demand for the spin-off recipe books. And that neatly brings us to the present day and the internet revolution, allowing us all to access thousands of recipes like the ones you can find on this web site. |
