The History of Recipes
It is quite possible to track the history of written cooking instructions way back into the far past, at least as far as pharonic Egypt, and quite possibly further than that. In practice though, sadly, these early cook books were just very basic pictorial recipes for preparing meals.
Interestingly, the oldest recipe discovered so far, according to experts in ancient history is a collection of stone tablets in ancient Sumerian which show the baking of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made people feel wonderful and blissful. Progressing into The time of the romans around 25BC a roman called Apicius assembled a collection of scripts describing recipes enjoyed by wealthy roman citizens. He tells us how the meals of wealthy Romans were divided into starters, main course and afters, a style of dining still practiced today. Aspicius also recounts how the ancient cooks made use of a good variety of spices and herbs, including a few that will be familiar to modern cooks like basil, mint and asafoetida. Later, in the 15th century, knights returning from the crusades brought back many foods and spices from Arab cuisine, including spices like coriander, parsley, and basil. These new culinary innovations was responsible for a torrent in manuscripts on cooking, many of which are kept safe in private collections. During the next few hundred years, the upper-class families of Wesstern Europe competed with each other to serve up the most extravagent banquests, and because of this the best chefs and their recipes increased in prestige. Nevertheless, it wasn`t until the 19th century that fine cookery and recipe collections reached a high level of popularity. Mrs Isabella Beeton in the UK, and the equally famous Fannie Merritt Farmer in the USA, devoted their lives to assembling, trying out, and recording recipes to help cooks of their time. Like it or not, the introduction of TV brought us celebrity TV chefs and the recipe books that accompanied them. Which pretty much brings us to the present day and the invention of computers and the internet, permitting us all to access thousands of recipes like those on sites such as this. |
