Ingredients
6 chocolate wafers, finely crushed
1 1/2 cup light cream cheese
1 cup sugar
1 cup 1% low-fat cottage cheese
1/4 cup plus 2 tbs unsweetened cocoa
1/4 cup all-purpose flour
1 tsp vanilla extract
1/4 tsp salt
2 tsp almond flavoring
1 egg
2 tbsp semisweet chocolate mini- morsels
1 chocolate leaves (optional)
Directions
Sprinkle chocolate wafer crumbs in the bottom of a 7 inch springform
pan. Set pan aside. Position knife blade in food processor bowl; add
cream cheese and next 7 ingredients, processing until smooth. Add egg
and process just until blended. Fold in chocolate morsels. Slowly
pour mixture over crumbs in pan. Bake at 300 degrees F. for 65 to 70
minutes or until cheese cake is set. Let cool in pan on wire rack.
Cover and chill at least 8 hours. Remove sides of pan, transfer
cheese cake to a serving platter. Garnish with chocolate leaves, if
desired. CHOCOLATE LEAVES: Melt chocolate in doubles boiler or
microwave. Using a non-poisonous leaf, brush on melted chocolate;
place in freezer for 2-3 hours. once hardened, peal leaf from the
chocolate to garnish.

Written cooking instructions as an idea can be traced back into the far past, certainly as far back into history as the ancient Egyptians, and maybe further still. Interesting though that maybe, sadly, these old cookbooks were just very simple pictorial recipes for food preparation.
As we move into The time of the romans 25BC a roman called Apicius compiled a collection of scripts showing how to cook the recipes prepared by wealthy Romans. In his scrolls, Apicius recounts how the roman meals were split into hors d`oeuvre, main meal and desserts, a very modern way of dining. Additionally, he informs us how the ancient cooks were skilled in the use of many spices, including a few that are still present in modern kitchens for example bay, fennel and asafoetida. Later, in the 15th century, knights returning from the crusades brought back many new foods and herbs from middle-east cuisine, including spices like coriander, parsley, and basil. These new foods and spices prompted an eruption in books on cooking, most of which are now in private libraries. By the time we get to the twentieth century, cookery publications are starting to become popular mostly as a result of higher levels of literacy, people having increased leisure time and having more money. |
