The History of Recipes
It is quite feasible to trace the history of recipes far back into distant history, at least as far as early Egypt, and quite possibly further than that. In practice though, in the main part, these old cookbooks were just basic hieroglyphic instructions for preparing food.
The truth of the matter is, the oldest recipe discovered, according to Professor Solomon Katz, is a collection of ancient tablets in ancient Sumerian describing the making of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making those who drank it feel `wonderful`. Moving on, we find two interesting books which appeared in the fourteenth century ; one book entitled `Forme of Cury`, and another called `Curye on Inglish`. The titles are a little misleading though, they are nothing to do with the curry that appears on menues today, but instead recipes for the types of food served to the rich and wealthy people of that period. During the following few centuries, the powerful and wealthy competed with each other to serve the most extravagent meals, and consequentially the best chefs and their recipe collections were greatly in demand. Even so, it wasn`t until the 19th century that haute cuisine and cookery books really came of age. Mrs Beeton in the UK, and Fannie Merritt Farmer in the US, devoted much of their lives to collating, verifying, and publishing recipes common in their social group. When we get to the twentieth century, recipe books are greatly in demand mostly as a result of better eduction, people having increased spare time and having more disposable income. |
