The History of Recipes
It is quite possible to track the history of recipes far back into ancient history, in truth as far into history as ancient Egypt, and maybe further still. Having said that, these, ancient cookbooks were just basic pictorial recipes for meal preparation.
Fascinatingly, the oldest recipe discovered, according to Professor Solomon Katz, are a few tablets in ancient Sumerian which describe the baking of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making people feel `wonderful`. Progressing into The time of the roman empire around 25BC a roman called Apicius wrote some scripts detailing recipes cooked by wealthy roman citizens. In his works, he recounts how the meals of wealthy Romans were split into appetizers, main meal and desserts, something that is very familiar to us today. He also describes how the early Romans were skilled in the use of a wide range of spices and herbs, including a few you will know such as thyme, rue and asafoetida. Over the following few centuries, the powerful and wealthy houses competed to offer the most exotic banquets, and consequentially chefs and their recipe collections were greatly in demand. Nevertheless, it was during the 19th century that fine cooking and recipe publications became popular. The Famous Mrs Isabella Beeton in the UK, and the equally well-known Fannie Merritt Farmer in the USA, spent years to assembling, testing, and publishing popular recipes of the day. The arrival of TV gave us TV cookery programs and the accompanying recipe books. And that neatly brings us to the present day and the invention of computers and the internet, permitting everybody to access thousands of recipes just like those on this site. |
