Ingredients
3 eggs
1 cup vegetable oil
1/2 cup apple juice
2 tsp vanilla
3 cup all-purpose flour, unsifted
1 3/4 cup sugar
1/2 cup cocoa
1 tsp baking soda
3/4 tsp salt
1/2 tsp cinnamon, ground
3 cup apples, diced, peeled, tart chopp
1 confectioners sugar or whipp d topp, ing
Directions
Grease well and flour 13 x 9 x 2" pan; set aside. Beat eggs slightly
in large mixing bowl; add oil, apple juice and vanilla. Combine
flour, sugar, cocoa, baking soda, salt and cinnamon; stir into batter
until smooth. Add apples and nuts; stir until thoroughly blended.
Pour into prepared pan. Bake @ 350 degrees for 40 to 45 minutes or
until cake tester inserted in center comes out clean. Cool in pan or
on wire rack. Serve sprinkled with confectioners' sugar or with
dollops of whipped topping.

The History of Recipes
It is possible to track the history of meal recipes way back into the distant past, at least as far back into history as the Egypt of the Pharoahs, and quite possibly further than that. Interesting though that maybe, sadly, these early cookbooks were just primitive pictorial recipes for meal preparation.
In fact, the oldest recipe discovered so far, according to food historians are some ancient tablets in Sumerian which recount the preparation of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making drinkers feel `blissful`. Later on, in The time of the romans around 25BC a man called Apicius assembled a collection of scripts describing recipes prepared by wealthy Romans. In his works, Apicius recounts how the roman meals were separated into hors d`oeuvre, entrees and desserts, something that is very familiar to us today. He also informs us how the ancient Romans made use of a good variety of spices and herbs, including a few that will be familiar to modern cooks for example basil, mint and dill. Later on in the 1400s, the Crusaders brought back many foods and spices from middle-east cuisine, including coriander, parsley, and basil. These new spices and herbs prompted an outbreak in books on cookery, some of which still exist in private libraries. For the decades that followed, the powerful families of the West competed with each other to offer the most extravagent banquests, and because of this the best cooks and their recipes could command a high salary. Even so, it wasn`t until the 1800s that cookery and recipe publications really came of age. The Famous Mrs Isabella Beeton in the UK, and the equally well-known Fannie Farmer in the USA, dedicated the best years of their lives to collecting, testing, and publishing recipes of the day. The arrival of television brought us TV cookery programs and the demand for the spin-off recipe books. And that pretty much brings us to the present day and the invention of the internet, permitting everyone to search through massive numbers of recipes such as those found on this site. |
