The History of Recipes
It is quite possible to prove the history of transcribed cooking instructions back into the far past, at least as far back into recorded history as pharonic Egypt, and maybe even further. Having said that, mostly, these old records were just very basic pictorial instructions for food preparation.
Interestingly, the oldest recipe discovered so far, according to experts is a series of stone tablets in Sumerian which recount the making of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making people feel `blissful`. During Roman times 25BC a roman called Apicius wrote a collection of documents describing recipes prepared by wealthy Romans. In his works, he describes how the meals of wealthy Romans were divided into hors d`oeuvre, main meal and desserts, a style of dining still practiced today. Aspicius recounts how the ancient chefs used a good variety of herbs and spices, including a few that will be familiar to modern chefs for example bay, fennel and asafoetida. Closer to modern times, we find some recipe books published in the 14th Century ; a recipe book called `Forme of Cury`, and another, similary titled `Curye on Inglish`. The titles are somewhat misleading tho`, these have no connection with the spicy food that is popular today, but instead accounts of the types of food on the menues of the rich and wealthy people of that period. In the fifteenth century, people returning from the crusades brought back many foods and spices from middle-east cuisine, including rosemary and coriander. These new foods and tastes prompted an explosion in cookery books, many of which are now in private cookery archives. During the succeeding few centuries, the powerful and wealthy competed with each other to offer the most extravagent banquests, and because of this the best cooks and their recipe collections became highly prized. However, it wasn`t until the 19th century the formal cooking and recipe collections rose to prominence. The Famous Mrs Beeton in the UK, and the equally famous Fannie Merritt Farmer in the USA, devoted their lives to collecting, verifying, and publishing the recipes of their peers. By the time we get to the 20th century, cookery publications are in great demand, mostly due to more people being able to read, increased leisure time and having more money. The arrival of television brings us TV cookery programs and the recipe books that accompanied them. And that pretty much brings us to the present day and the internet revolution, permitting everyone to search through massive numbers of recipes just like those on the site you are now reading. |
