The History of Recipes
It is quite possible to follow the history of written cooking instructions way back into ancient history, in fact as far back as the Egyptians, and maybe even further. Interesting though that is, mostly, these old recipes were just primitive pictorial, hieroglyphic or cunieform instructions for preparing food.
The truth of the matter is, the most ancient recipe found, according to experts in ancient history are some clay tablets in Sumerian describing the preparation of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made anyone who drank it feel `exhilarated, wonderful and blissful`. Moving on, we have some interesting books from the 1300s - a book titled `Forme of Cury`, and another titled `Curye on Inglish`. The titles are somewhat misleading tho`, they are not about the spicy food that appears on menues today, but rather accounts of the types of food enjoyed by the rich and wealthy people of the period. Later, in the 15th century, knights returning from the crusades brought us a variety of foods, spices and herbs from the Middle-East, including spices such as coriander, parsley, and basil. These new foods and tastes was responsible for an increase in manuscripts on cookery, some of which still exist in private cookery archives. During the following few centuries, the rich families of Europe strove to offer the best banquets, and as a result chefs and their recipes increased in prestige. However, it was during the nineteenth century that cooking and recipe publications became really popular. The Famous Mrs Isabella Beeton in the UK, and the equally well-known Fannie Farmer in the USA, dedicated the best years of their lives to assembling, trying out, and writing down recipes for their fellow cooks to enjoy. By the advent of the 1900s, cooking publications are greatly in demand due to increased literacy, leisure time and a general increase in wealth. The revolution that is television brought us TV chefs and the spin-off recipe books. And that pretty much brings us to the present day and the invention of the internet, permitting everyone to search through massive numbers of recipes just like those on sites such as the one you are reading now. |
