The History of Recipes
Experts have tracked the existance of recipes far back into the far past, in fact as far back as early Egypt, and potentially, even further back. However, these, early records were just very simple hieroglyphic instructions for meal preparation.
Fascinatingly, the oldest recipe in existence, according to academics are some tablets in ancient Sumerian which show the baking of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making those who drank it feel wonderful and blissful. As we move into The time of the roman empire around 25BC a man called Apicius compiled some scripts detailing recipes prepared by wealthy Romans. In his works, Apicius tells us how the roman meals were divided into hors d`oeuvres, main course and afters, known in latin as `Gustatio, Primae Mensae and Secundae Mensae`. This early Roman chef describes how the Roman cooks made use of many different spices and herbs, including a few that will be familiar to modern cooks such as basil, fennel and asafoetida. Over the following few centuries, the rich families of Europe competed to lay on the most exotic meals, and as a consequence, the best chefs and their recipe collections were much in demand. Even so, it wasn`t until the nineteenth century that cooking and recipe publications really came of age. Mrs Isabella Beeton in the UK, and the equally well-known Fannie Farmer in the US, dedicated years of their lives to collating, testing, and publishing recipes for their fellow cooks to enjoy. When we get to the 1900s, recipe books were highly popular mostly due to more people being able to read, people having increased spare time and having more disposable income. |
