The History of Recipes
Academics have tracked the existance of recipes far back into the far past, in truth as far into history as pharonic Egypt, and maybe even further. In practice though, mostly, these early cookbooks were just very basic hieroglyphic instructions for preparing food.
Interestingly, the most ancient recipe discovered, according to experts are some ancient tablets in Sumerian which show the making of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made drinkers feel wonderful. As our culinary historical trip moves on a few more years we find two interesting recipe books published in the 1300s ; a recipe book titled `Forme of Cury`, and another, similary named `Curye on Inglish`. The titles are a little misleading though, they are nothing to do with the spicy food that is served today, but rather descriptions of the types of food enjoyed by the rich and powerful of those days. In the fifteenth century, people returning from the crusades brought us many new foods and spices from the holy land, including spices such as parsley and basil. The introduction of these new tastes led to a surge in manuscripts on cookery, some of which still exist in academic collections. During the succeeding few hundred years, the families of Europe tried to serve up the most extravagent banquests, and consequentially chefs and their recipe collections became highly prized. Notwithstanding that, it was during the 1800s that cooking and recipe publications really came of age. Mrs Beeton in the UK, and the equally famous Fannie Merritt Farmer in the USA, dedicated years of their lives to collating, verifying, and recording the recipes that were being prepared for the better households. Like it or not, the introduction of television gave us celebrity chefs and the demand for the spin-off recipe books. Which brings us neatly to the present day and the internet revolution, permitting us all to search through massive numbers of recipes like those on the site you are now reading. |
