The History of Recipes
Academics have traced the existence of recipes way back into antiquity, at least as far as pharonic Egypt, and potentially, even further back. In practice though, these, old cook books were just very basic pictorial instructions for preparing food.
Fascinatingly, the oldest recipe found, according to food historians is a series of tablets in Sumerian which show the baking of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making anyone who drank it feel blissful and exhilarated. Progressing into The time of the romans 25BC a roman called Apicius compiled a number of documents describing recipes enjoyed by the Romans. In his publication, he tells us how the roman meals were separated into appetizers, entrees and dessert, known in latin as `Gustatio, Primae Mensae and Secundae Mensae`. Aspicius tells us how the cooks of his times made use of many herbs and spices, including a few that will be familiar to modern chefs like bay, rue and parsley. Over the next few centuries, the rich and powerful families of Wesstern Europe competed with each other to serve the most extravagent meals, and as a result the best chefs and their recipe collections could command a high salary. However, it was during the 1800s that haute cuisine and cookery books really came of age. The Famous Mrs Beeton in the UK, and the equally famous Fannie Farmer in the US, dedicated years of their lives to collating, verifying, and publishing recipes to help cooks of their time. The introduction of television brings us cooking programs and the demand for the accompanying recipe books. And that brings us to the present day and the invention of computers and the internet, allowing everyone to search through thousands of recipes like the ones you can find on our site. |
